Ingredients

The ingredients are:
  • 1 cup pinto beans, soaked overnight, then drained
  • 2 cups beer (lager beer Corona)
  • 1/4 teaspoon baking soda
  • 2 teaspoons chicken base (or 2 bouillon cubes)
  • 1/3 cup chopped onion
  • 1 teaspoon epazote (optional)
  • 2 cloves garlic, chopped
  • 2 ounces bacon, chopped (and fat rendered out)

How to Make

  • Step 1: Place soaked beans in a saucepan with the beer. baking soda, chicken base, onion, epazote, garlic, and partially cooked bacon.

  • Step 2: Stir to mix, bring to a boil, and skim off any foam.

  • Step 3: Then reduce heat, cover and simmer for about 90 minutes (give or take), stirring occasionally and making sure it doesn't cook dry.

  • Step 4: Beans should be tender with a thick sauce when it's done.
