Ingredients

The ingredients are:
  • 1 leek (white part only finely chopped)
  • 1 red bell pepper, diced
  • 4 cloves garlic, minced
  • 2 teaspoons fresh minced rosemary
  • 1/8 teaspoon crushed chili flakes (or adjust to heat level)
  • 1 large turnip, peeled and diced
  • 1 medium sweet potato, peeled and diced
  • 1 whole orange (zest and juice of 1 orange)
  • 1 (15 ounce) can white beans, drained and rinsed
  • 4 cups chopped fresh spinach leaves (or can use kale)
  • Sea salt and black pepper, to taste

How to Make

  • Step 1: Sauté the leek and red pepper in oil in a large skillet for 8 minutes.

  • Step 2: Add the garlic, rosemary and chili flakes; cook another minute.

  • Step 3: Add the turnip, sweet potato, orange juice/zest, the beans, and cook for 10 minutes, until the vegetables are tender.

  • Step 4: Add the spinach leaves, season with salt and pepper and cook until the spinach is tender, about 3 minutes (if using kale increase cooking time or until kale it tender).
