Ingredients

The ingredients are:
  • 1 (8 ounce) package freekeh (freekeh in tamari flavor, if you can find it)
  • 1 tablespoons brown sugar
  • 2 teaspoons curry paste
  • 2 tablespoons tamari (or Bragg's liquid aminos)
  • 1 tablespoon lime juice
  • 2 tablespoon water
  • 4 cloves garlic, minced
  • 2 tablespoons peanut oil
  • 1 bunch baby bok choy, sliced
  • 1 red bell pepper, sliced
  • 8 to 10 green onions, sliced diagonally
  • 2 heads fresh broccoli (cut into broccoli florets)
  • 1 (7 ounce) package garlic tempeh (Turtle Island Tofurky sesame garlic tempeh, sliced in half)
  • Sea salt and ground pepper (to taste)

How to Make

  • Step 1: Cook entire bag of freekeh on the stovetop in vegetable broth or water for about 20 minutes on medium heat.

  • Step 2: Mix brown sugar, curry paste, tamari, lime juice, water, and garlic in a small bowl. Set aside.

  • Step 3: Heat wok on medium-high heat. Add peanut oil and vegetables and cook for 5 minutes, stirring regularly.

  • Step 4: Add tempeh and sear on both sides for 2 minutes.

  • Step 5: Add sauce and heat for 2 minutes more.

  • Step 6: Season with salt and pepper to taste.

  • Step 7: Serve over freekeh.
