Ingredients

The ingredients are:
  • DRESSING
  • 2 tablespoons lime juice
  • 1 tablespoon vinegar (rice wine vinegar)
  • 1 teaspoon fresh ginger, minced
  • Salt to taste
  • Pinch of cayenne
  • 2 teaspoon sesame oil
  • 1/4 cup oil (canola oil)
  • 2 tablespoons buttermilk
  • SALAD
  • 3 cups quinoa (cooked and cooled I use 1 cup dry quinoa and rinse it really well, add 2 cups water and cook like rice about 15 minutes)
  • 4 green onions, thinly sliced on the diagonal
  • 1 small cucumber, sliced on the diagonal
  • 1/4 cup cilantro, rough chop
  • 1 pound shrimp (cooked shrimp or prawns)

How to Make

  • Step 1: Dressing: Combine all ingredients in jar and shake well; refrigerate.

  • Step 2: Salad: To cooled quinoa, add green onion, cucumber, cilantro and shrimp.

  • Step 3: Pour dressing over all and mix well.
