Ingredients

The ingredients are:
  • 4 large spinach wraps (you can always use a plain flour tortilla)
  • 2 cups (approx) pimento cheese spread (use your favorite recipe, or purchase some - try Recipe 9450 here on RecipeZazz, it is the same recipe I have been using for years)
  • 1/2 cup cooked diced bacon
  • 4 plum tomatoes, lightly seeded and squeezed, and diced

How to Make

  • Step 1: Pimento Cheese ... As I said, make your own, or buy some. Most grocery store delis make their own. Try Recipe 9450 here on RecipeZazz by Sue; it is the same recipe I have used for years. The only difference, is I use a mix of sharp and mild cheddar; but, everything else is the same. A very nice recipe. Make sure to make the cheese a few hours before serving. It gets better over time.

  • Step 2: Bacon ... You can use whatever method you prefer to cook the bacon; heck, you can even buy precooked bacon these days. I love to bake an entire package when I bring it home; freeze, and it is ready to use when I need it. Just use the real stuff.

  • Step 3: Wrap and Roll ... Spread about 1/2 cup of the pimento spread on the tortilla, leaving a 1/2" border from 1 end, and both sides. Leave a 2" border at the other end. Top with the bacon crumbles, and tomato. You want to finish at the end where you have a good 2" border. Remember, as you roll, the filling expands; which is why you have a larger border at the finish end, so it does spill out. Roll firmly.

  • Step 4: Serve and ENJOY! ... Cut in half on an angle for lunch or dinner; or, cut in thirds, or smaller slices, for appetizers or a snack. They are easy to make and full of flavor.
