Ingredients

The ingredients are:
  • 1 1/2 cups chicken broth
  • 1 teaspoon freshly grated tangerine zest
  • 1 cup jasmine rice
  • ½ cup chopped onion
  • 1/3 cup golden or dark raisins (optional)
  • 1/3 cup fresh squeezed tangerine juice
  • 1/8 teaspoon ground allspice or cinnamon
  • 2 tangerines, peeled and cut into small pieces

How to Make

  • Step 1: Combine broth and tangerine zest in a 2 quart saucepan. Bring to a boil, add rice, cover and simmer 15 to 20 mintes over low heat until rice is done and liquid is absorbed.

  • Step 2: Remove from heat and let sit, covered, for 10 minutes.

  • Step 3: In a skillet, add onion, raisins, juice and allspice, cooking until onion is softened (about 3 to 4 minutes).

  • Step 4: Add to cooked rice, and toss in tangerine pieces.
