Ingredients

The ingredients are:
  • 4 Chicken breasts; skinned, boned
  • 1 lime (juice of one lime)
  • 2 Clove Garlic; crushed
  • Black pepper; to taste
  • 1/2 Teaspoon Cumin
  • 3 Scallions; chopped
  • 1 Medium Red bell pepper
  • 1 Medium Yellow bell pepper
  • 1 Medium Green bell pepper
  • 8 Whole-wheat tortillas
  • 1 Tabelspoon Vegetable oil
  • 1 Tabelspoon Water
  • 3 Teaspoon jalapeno peppers, chopped fine
  • Salt, to taste
  • Fresh cilantro, chopped, to taste
  • 1 Medium Tomato; diced
  • Salsa, to taste

How to Make

  • Step 1: Slice the chicken into chunks about 1/2 inch square.

  • Step 2: Place them in a large bowl. Squeeze the lime juice over chicken.

  • Step 3: Add the garlic, scallions, black pepper, and cumin, and toss to mix.

  • Step 4: Slice the bell peppers into strips and set aside.

  • Step 5: Wrap the tortillas in a thin, clean dishcloth, place them on an ovenproof plate, and put

  • Step 6: The plate in the oven.

  • Step 7: Warm the tortillas at the lowest setting on your oven while preparing the fajita mixture.

  • Step 8: Heat the oil and water in a large saucepan over medium heat and add the chicken, bell

  • Step 9: Peppers, and jalapeno peppers.

  • Step 11: Saute, stirring frequently, until the chicken and vegetables are cooked through, about 25 minutes.

  • Step 12: Add salt to taste.

  • Step 13: Spread a spoonful of the fajita mixture in a thick line in the middle of each tortilla.

  • Step 14: Top with cilantro, tomato, and salsa to taste.

  • Step 15: Roll up the tortillas and serve.

  • Step 16: Makes 4 servings of 2 fajitas each.
