Ingredients

The ingredients are:
  • 1 bell pepper, seeded and thinly sliced (a large pepper)
  • 2 cups arugula, lightly packed
  • 2 small tomatoes, thinly sliced
  • 2 cups sliced mushrooms (white mushrooms)
  • 1/2 cup red onion, thinly sliced
  • Cheese slices (your choice of cheese and any amount you like)
  • Sunflower seeds (about 1/3 cup should do it)
  • Hummus (any amount you like)
  • 4 whole-wheat tortillas (8 inch)

How to Make

  • Step 1: Spread a thin layer of hummus on the tortilla (all the way to the edges).

  • Step 2: Layer the veggies, sunflower seeds and cheese over the hummus.
