Ingredients

The ingredients are:
  • SAUCE
  • 2 cans (10 ounces each) Rotel tomatoes, drained and divided
  • 1/4 cup onion, chopped
  • 2 cloves garlic
  • 1 tablespoon cider vinegar
  • 1 tablespoon brown sugar
  • 1/2 teaspoon chipotle in adobo sauce, minced
  • 1 teaspoon tomato paste
  • 1/2 teaspoon prepared yelloe mustard
  • 1 lime (juice of 1 lime)
  • Salt and freshly ground black pepper to taste
  • MEATBALLS
  • 6 ounces ground pork
  • 2 ounces chorizo (Mexican)
  • Hot and Spicy Cheez-its (1/4 cup)
  • 1 egg slightly beaten
  • 1/4 cup onion, grated (or very finely chopped)
  • 2 tablespoon fresh oregano, chopped
  • 1 tablespoon sour cream
  • 1 tablespoon garlic, minced
  • 1 tablespoon lime zest, minced
  • 1 jalapeno, seeded and minced
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon chili powder
  • 1 tablespoon olive oil
  • Fresh cilantro, chopped to garnish

How to Make

  • Step 1: Preheat oven to 450f degrees.

  • Step 2: Sauce: Puree 1 can tomatoes, chopped onion, garlic cloves, vinegar, brown sugar, chipotle, tomato paste, mustard and lime juice, in a food processor, stir in the second can of tomatoes and season with salt and pepper; set aside.

  • Step 3: Meatballs:

  • Step 4: Mix ground pork, chorizo, cheez-its, egg, grated onion, oregano, sour cream, minced garlic, zest, jalapeno 1/2 teaspoon pepper and chili powder in a bowl.

  • Step 5: Scoop mixture into 10 portions using a #30 scoop or about 2 heaping tablespoons; form into balls.

  • Step 6: Heat oil in a large frypan over medium heat, add meatballs and brown 4 minutes, turning once; turn off heat and transfer meatballs to a paper towel lined plate and drain drippings from pan. Pour sauce into the same drained pan and add meatballs; cover and place on middle rack in oven; bake 10 minutes.

  • Step 7: Serve meatballs with the sauce; garnish with cilantro.
