Step 1: Watermelon ... First, lightly salt the watermelon on each side, and set on a wire rack to drain - a good 15-20 minutes. Then, rinse and pat dry.
Step 2: Grill ... I microwave the honey, just a few seconds to loosen it up. Brush the honey on the first side; and place honey side down on the grill. Then, brush the second side with honey. Grill a couple of minutes (2-3) per side, until you get some nice grill marks. Remove from the grill, and season lightly with salt and pepper.
Step 3: Serve and ENJOY! ... I like them simply served as is. But, cut up the watermelon and toss with fresh mint, a squeeze of lime, black olives, and some crumbled Feta for a delicious salad. It is a fantastic summer dish!
