Step 1: Salad ... Add all the ingredients to a small bowl, except the basil and croutons; and toss to combine. Go easy on the salt and pepper, because you can always re-season. Right before serving, you want to add the basil and the croutons. Now, I don't like big croutons bits; so, I just like to crunch them up a bit. They add a nice texture to the salad - simply breaking them up in your hand works best.
Step 2: Avocado ... Cut the avocado in half, remove the pit, lightly brush with olive oil, and season with salt and pepper. Using either a grill pan or outdoor grill (which I prefer) for this recipe. Grill the avocado, cut side down for 1-2 minutes until you get some light grill marks; flip, and grill another couple of minutes until the avocado is slightly warm.
Step 3: Finish, Serve, and ENJOY! ... Add the croutons and basil to the salad, and toss to combine; then, let it rest a minute or two before serving. Using a slotted spoon, add the salad to the warm avocado. These are a fantastic side dish, or a perfect lunch. Delish! A fresh orange salad on the side is perfect; or for lunch ... Serve the avocado over a bed of greens tossed with orange slices. A crusty baguette topped with fresh mozzarella is a great side as well.
