Ingredients

The ingredients are:
  • AVOCADOS
  • 2 avocado (ripe but firm, cut in half and the pit removed)
  • Olive oil
  • Salt
  • Pepper
  • SALAD
  • 1 large plum tomato, seeded and diced
  • 4 sun dried tomatoes (in oil, drained and fine diced)
  • 2 scallions, chopped on an angle (white and green parts)
  • 3 tablespoons cucumber, peeled seeded and fine diced
  • 15 kalamata olives (or black olives, chopped (use more or less depending on your tastes)
  • 1 tablespoon capers
  • 3 tablespoons croutons, lightly crushed (I prefer homemade, but you can also use a good store bought one)
  • 4 to 5 basil leaves, torn
  • DRESSING
  • 1 tablespoon fresh orange juice
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon fresh lime juice
  • 1 tablespoon cider vinegar
  • Pinch of sugar (to taste)
  • Salt to taste
  • Pepper to taste

How to Make

  • Step 1: Salad ... Add all the ingredients to a small bowl, except the basil and croutons; and toss to combine. Go easy on the salt and pepper, because you can always re-season. Right before serving, you want to add the basil and the croutons. Now, I don't like big croutons bits; so, I just like to crunch them up a bit. They add a nice texture to the salad - simply breaking them up in your hand works best.

  • Step 2: Avocado ... Cut the avocado in half, remove the pit, lightly brush with olive oil, and season with salt and pepper. Using either a grill pan or outdoor grill (which I prefer) for this recipe. Grill the avocado, cut side down for 1-2 minutes until you get some light grill marks; flip, and grill another couple of minutes until the avocado is slightly warm.

  • Step 3: Finish, Serve, and ENJOY! ... Add the croutons and basil to the salad, and toss to combine; then, let it rest a minute or two before serving. Using a slotted spoon, add the salad to the warm avocado. These are a fantastic side dish, or a perfect lunch. Delish! A fresh orange salad on the side is perfect; or for lunch ... Serve the avocado over a bed of greens tossed with orange slices. A crusty baguette topped with fresh mozzarella is a great side as well.
