Ingredients

The ingredients are:
  • DRESSING
  • 1/2 cup Earth Balance salad spread (Original MindfulMayo Dressing & Salad Spread)
  • 1 large garlic clove, minced
  • 1/4 cup chopped cilantro
  • 1 tablespoon wasabi paste, or to taste
  • 1 to 2 tablespoons freshly-squeezed lime juice
  • 1 tablespoon rice wine vinegar
  • 1 teaspoon sugar
  • Salt, to taste
  • SALAD
  • 5 cups shredded cabbage
  • 1/2 cup shredded carrots (hand-squeeze out excess moisture)
  • 1 bunch green onions, chopped
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped peanuts
  • 1 tablespoon toasted sesame seeds
  • Salt and pepper (to taste)

How to Make

  • Step 1: Place all dressing ingredients in a blender and pulse until smooth. Adjust seasonings and add salt to taste.

  • Step 3: Refrigerate a few hours before serving
