Ingredients

The ingredients are:
  • 1/2 pound ground beef
  • 1 teaspoon taco seasoning (I used homemade)
  • 4 6 inch tortillas
  • 6 tablespoons salsa,divided( I used mild,but but you can use any heat level you like )
  • 1 roma tomato,diced
  • 1/2 cup frozen corn,thawed
  • 1/2 small red onion diced
  • Cooking spray
  • 1 cup shredded Mexican blend cheese
  • 4 Tablespoons chopped green onion, optional
  • 4 Tablespoons diced black olives, optional

How to Make

  • Step 1: Preheat oven to 375°F.

  • Step 2: While oven is heating,add ground beef and taco seasoning to a medium-sized skillet over medium heat.

  • Step 3: Cook beef until no longer pink,about 8 to 10 minutes,drain if needed.

  • Step 4: Add onion and corn to seasoned beef,mixing well.

  • Step 5: Lightly spray two medium sized cookie sheets with cooking spray and place two tortillas on each sheet,then lightly spray tortillas with more cooking spray.

  • Step 6: Bake until lightly browned, about 6 to 8 minutes.

  • Step 7: Remove tortillas from oven and evenly spread 1 1/2 tablespoons of salsa on each.

  • Step 8: Top each tortilla evenly with corn/meat mixture then top each evenly with tomato and cheese.

  • Step 9: Bake for 10 to 12 minutes or until cheese is melted.
