Step 1: Peeling Tomatoes ... This is much easier than you think. Bring a large pot of water to a rolling boil. Cut an "X", with a sharp knife on the base of the tomato (not the stem end), and place in the water. Boil for 20-30 seconds then remove to a bowl of ice and water, which stops the cooking process. Then just peel the skin right off - that simple. Now, your tomatoes are ready to chop.
Step 2: Jam ... Add the tomatoes, jalapeno, lime juice, sugar, and spices to a medium pot and bring to a boil for 3-4 minutes stirring often. Reduce the heat to low, and simmer, stirring occasionally, until mixture has consistency of thick jam, about 1 1/2 hours, maybe a bit less.
Step 3: Finish ... Let the mixture cool, then pour to your bowl or jars. I like to use the small mason or canning jars (I always have a few on hand). This doesn't make a large batch, and it will last a good week or two in the refrigerator; and, it freezes well. If you are someone who cans ... this recipes works very well - I have only done it once, but had excellent results.
Step 4: Serve and ENJOY! ... It is great on crackers with goat or cream cheese, delicious on a burger, perfect on grilled fish or chicken; also, delicious as a spread on sandwiches. It really is very versatile.
