  • 2 (8.5 ounce)package corn muffin mix (Jiffy Corn Muffin Mix)
  • 2 eggs (large size)
  • 1 can (10 ounce) diced tomatoes with green chilies, undrained
  • 1 can (8.75 ounce) of whole kernel corn drained
  • 1/2 cup finely chopped onions
  • 1/2 to 1 whole jalapeno pepper, finely chopped
  • 3/4 cup shredded cheddar cheese

How to Make

  • Step 1: Preheat oven to 350 degrees F.

  • Step 2: Grease muffin pan or use paper baking cups.

  • Step 3: In a large bowl blend all ingredients together including the juice from the tomatoes.

  • Step 4: Spoon batter into muffin cups; 3/4 full.

  • Step 5: Bake in preheated oven until toothpick inserted into center of a muffin comes out clean, 20 to 25 minutes.
