Step 1: Orange ... Zest the orange and set to the side in a small bowl or ziploc bag. This will be used as the garnish. Then, juice the orange, which is used in the granita.
Step 2: Base ... In a 9x9 glass dish, or similar size dish; add the yogurt, orange juice, and sugar and mix well. Freeze 4-5 hours, scraping (using a fork), and stirring every 30 minutes until the entire dish is firm. If you don't stir every 30 minutes, it will freeze in a solid block which you don't want. You want it to look like a "snow cone."
Step 3: Serve ... Add a scoop of the granita in your favorite dessert dishes, martini glasses, or wine classes, etc. Garnish with the orange zest and a mint sprig. And - chocolate is the perfect compliment to the yogurt; so, I love a chocolate dipped cookie too. ENJOY!
