Step 1: Combine the rhubarb, sugar, and water in a large saucepan.
Step 2: Bring to a boil, reduce heat, and simmer for about 15 minutes or until the rhubarb is tender and loses it's color. Let cool.
Step 3: Place a fine mesh sieve over a 4-cup container and pour rhubarb mix into it. Let it strain without pressing for about 30 minutes or until it stops dripping. Discard the solids.
Step 4: Chill the syrup until ready to use.
Step 5: It can be stored in the refrigerator about a month and longer in the freezer. You may try freezing it in ice cube trays.
Step 6: Use to make flavored Tea, Lemonade, or mixed drinks.
Step 7: You can also make a float with it mixed with club soda and vanilla ice cream or strawberry sorbet scoops.
