Step 1: Ancho Peppers ... Add the peppers to a small bowl and cover with boiling water. Make sure to cover the bowl with plastic wrap or a towel, potholder, etc. Let it set a good 10 minutes until the peppers are soft. Remove from the water and set to the side to cool and drain. Discard the water; then, remove the seeds and ribs.
Step 2: Sauce ... Add the re-hydrated peppers and all the other ingredients to a blender and puree until smooth.
Step 3: Ribs ... Remove the ribs from the refrigerator to take the chill off. You never want to cook with cold proteins - let them come to room temperature. Then, season on each side with salt and pepper, and add to the crock pot. Pour the sauce over the ribs.
Step 4: Crock Pot ... Cover, and cook on low for 6-8 hours. Remember, the new crock pots cook much hotter than the old ones. Mine took 7 hours on low. Just give them a check after 6 hours to see how they are doing. The ribs are done when they are fork tender.
Step 5: Serve and ENJOY! As I said, I love to serve with some yellow rice; maybe some grilled squash, black beans, or even a slaw or potato salad. This is great BBQ, potlock, entertaining food. Easy, but absolutely delicious!!
