Ingredients

The ingredients are:
  • 1 can (15 ounce) cream of coconut
  • 1 lime, juiced
  • 1 cup water (actually just shy of 1 cup - see step 1)
  • 1/2 teaspoon golden rum (more if you want more of a 'rum' flavor)
  • 1/4 cup unsweetened coconut (optional)
  • GARNISH
  • Lime zest
  • Mint sprig
  • Grilled pineapple rings (optional)

How to Make

  • Step 1: Coconut ... Add the cream of coconut to a bowl and whisk well; or, you can also use an immersion blender. Cream of coconut can settle in the can, and it must be blended or mixed well, prior to adding to the rest of the ingredients.

  • Step 2: Base ... Add the juice of 1 lime into a measuring cup; then add enough cold water to equal 1 cup. Add this, along with the rum, to the bowl with the cream of coconut and mix to combine. If you want, you can also add unsweetened coconut to the mix; this is completely optional.

  • Step 3: Freeze ... Add the mixture to a 9x9 pan and freeze for 3-5 hours, scraping with a fork every 30 minutes. The scraping is what turns it into ice shavings, or a granita. And, don't forget to scrape every 30 minutes; otherwise, you will end up will a frozen block of "coconut rum ice." The freezing time can vary according to how packed, and how cold your freezer is. Three (3) hours is the minimum; but, it could take up to 5 hours to be completely frozen.

  • Step 4: Serve and ENJOY! A simple scoop garnished with lime zest and a mint sprig is great; or, my favorite ... over grilled pineapple rings - which can be warm or chilled.
