Step 1: Split croissants in half and spread each with 1 tbsp. softened butter.
Step 2: Cut brie into 1/4" slices and place about 2 oz. on each croissant.
Step 3: Tear some leaf lettuce and place on sandwiches.
Step 4: Peel cucumber and slice thin; place across lettuce leaves.
Step 5: Place about 1/4 cup alfalfa sprouts over cucumber.
Step 6: Whisk together vinegar and oil; drizzle lightly over vegetables on sandwich.
Step 7: Place top on croissant and serve.
