Ingredients

The ingredients are:
  • 1 cup all-purpose flour
  • 3/4 cup white sugar
  • 1/3 cup baking cocoa powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 cup low-fat milk
  • 2 teaspoons vinegar
  • 1/4 cup vegetable oil
  • 1 egg, beaten
  • 2 teaspoons vanilla extract
  • 3/4 cup grated zucchini (finely grated)
  • 1/2 cup boiling water (slightly cooled)
  • 1/2 cup semi-sweet chocolate chips

How to Make

  • Step 1: Preheat oven to 350 degrees.

  • Step 2: Line a muffin tin with 12 paper liners.

  • Step 3: In a medium bowl whisk together flour, sugar, cocoa, cinnamon, baking soda, and salt.

  • Step 4: In another bowl whisk together milk, vinegar, vegetable oil, beaten egg, and vanilla until combined.

  • Step 5: Pour the wet mixture over dry cocoa mixture and stir by hand until all the flour is incorporated.

  • Step 6: Stir in the zucchini followed by boiling water ( mixture will be thin).

  • Step 7: Fill muffin liners 3/4 of the way full, sprinkle with chocolate chips.

  • Step 8: Bake for 13-17 minutes until tops spring back and a tester inserted in the center of a muffin comes out clean.
