Step 1: Cook the rice in 4 cups of water in a saucepan until tender, about 20 minutes.
Step 2: In a bowl combine mayonnaise, minced garlic, curry powder and the artichoke marinade from the jar, start with 1 tablespoon then just keep adding until you reach your desired taste that you want. Set aside.
Step 3: In a large bowl combine chopped artichoke hearts, green onions, bell pepper, parsley, and celery. Mix in cooked rice, then mix in reserved marinade mixture.
Step 4: Add in salt and pepper using how much you want.
Step 5: Cover and chill overnight. Serve cold.
