  • 1 1/2 pounds cucumbers (3 cucumbers, peeled, halved lengthwise, seeded, and sliced thin)
  • 1/2 cup red onion, thinly sliced
  • 3 tablespoons cider vinegar
  • 1/2 cup sour cream
  • 1 to 3 tablespoons fresh mint, chopped (to taste)
  • 1 teaspoon grated lemon zest
  • 1/2 teaspoon granulated sugar
  • Salt and pepper
  • 1 ounce radish (6 whole, trimmed and sliced thin)

How to Make

  • Step 1: Spread cucumber slices in single layer on paper towel–lined baking sheet; refrigerate for 20 minutes.

  • Step 2: Combine onions and vinegar in bowl and let sit for 20 minutes.

  • Step 3: Whisk sour cream, mint, zest, sugar, and 1/2 teaspoon salt together in large bowl. Add cucumbers, radishes, and onion-vinegar mixture, and toss to combine.

  • Step 4: Season with salt and pepper to taste.
