Ingredients

The ingredients are:
  • 3/4 pound boneless skinless chicken breasts, cut into thin strips
  • 1 red pepper, cut into strips
  • 1 onion, sliced
  • 3/4 cup salsa
  • 1/2 to 3/4 cup rinsed canned black beans
  • 6 small flour tortillas
  • 1-1/2 cups shredded Cheddar Cheese

How to Make

  • Step 1: Add some oil in a large skillet on medium-high heat; add in checken strips and cook for 5 minutes or until cooked through thoroughly, stirring frequently. Remove to a plate.

  • Step 2: To the same skillet add peppers and onions; cook and stir 4 to 5 min. or until vegetables are crisp-tender. Add the chicken back to the skillet, then stir in salsa and beans; cook 3 minutes or until heated through, stirring occasionally.

  • Step 3: Divide the chicken mixture chicken onto half of each tortilla; top with cheese. Fold tortillas in half.

  • Step 4: Wipe out the skillet with a paper towel, then add a little oil or spray with cooking spray. Heat on medium heat. Add quesadillas, in batches; cook 2 minutes on each side or until lightly browned on both sides.

  • Step 5: Fold each quesadilla in half or cut into wedges to serve.
