Ingredients

The ingredients are:
  • 5 slices bacon (turkey bacon, or veggie bacon, cooked crisp and crumbled)
  • 1 cup chopped celery
  • 2 scallions, sliced
  • 4 small radishes, sliced
  • 3 hard-cooked eggs, peeled and chopped
  • 1 cup chopped fat-free cheddar cheese
  • 12 ounces extra firm tofu, cubed (one box)
  • 2 dill pickle spears, chopped
  • 1 tablespoon Dijon mustard
  • 1/2 cup fat-free mayonnaise
  • 1/4 cup sour cream
  • 1/4 cup toasted sliced almonds (or 1/4 cup toasted sunflower seeds)
  • 3/4 teaspoon salt
  • 1/2 teaspoon pepper

How to Make

  • Step 1: Mix everything except tofu together until it is mixed well.

  • Step 2: Gently fold in tofu until it is coated.
