Ingredients

The ingredients are:
  • 2 1/2 cups blueberry juice (I used Ocean Spray)
  • 1 1/4 cups Greek yogurt
  • 1/4 to 1/3 cup frozen blueberries
We recommend you get your ingredients ready before you start cooking. Once you're ready, here are the steps to making this delicious recipe

How to Make

  • Step 1: Yogurt Base ... Add the yogurt and juice to a small bowl and mix to combine.

  • Step 2: Blueberries ... I prefer to use frozen vs fresh for this recipe; they just seem to work better. Thaw them in a colander over a bowl, so they do NOT sit in water.

  • Step 3: Pops ... Add the cups to a a square pan; You DO NOT want them moving around. A 9x9" size pan seems to work well for this. Fill the cups with the yogurt mix, and then approximately 1 tablespoon of the blueberries. Cover tightly with plastic wrap. I even use a little tape on the sides to make sure the wrap is really tight and secure over the pan. Then, make a very small slit with a sharp knife over the center of each cup. Put in one of the popsicle sticks. The plastic wrap will help hold the popsicle sticks in place.

  • Step 4: Freeze ... Add the cups to the freezer, and chill at least 5 hours until firm. I usually check after an hour or so to see if any of the popsicle sticks fell over. If so, just straighten them. Usually the plastic will keep them in place.

  • Step 5: Serve and ENJOY! As mentioned, if you have popsicle molds; these also work very well. With the paper cups - simple peel the cup off and enjoy. A great, easy summertime snack ... for kids and adults.
