Step 1: Preheat oven to 350F.
Step 2: Spray a bread pan with non-stick cooking spray and set aside.
Step 3: Steam zucchini in large pot until soft and tender.
Step 4: Meanwhile, combine dry ingredients in a large bowl and make a well in the center.
Step 5: Remove zucchini from pot and mash well with a fork.
Step 6: Add eggs, bananas, zucchini, avocado and oil to the center and combine them before folding in the rest of the dry ingredients.
Step 7: Mix well to combine; stir in pine nuts, almonds, dried cranberries and cocoa powder.
Step 8: Transfer batter to prepared pan.
Step 9: Bake for 60 minutes or until toothpick inserted into the middle comes out clean.
Step 10: Set aside to cool before serving.
