  • 2 teaspoons oil (olive oil)
  • 1 large yellow onion, chopped
  • 3 garlic cloves, minced
  • 1 teaspoon crumbled oregano
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon cayenne
  • 1 1/2 cups cooked black beans (drained)
  • 1 1/2 cups chicken broth
  • 2 tablespoons chopped fresh cilantro (parsley ok)
  • Soft flour tortillas (or crispy tortillas strips, optional)

How to Make

  • Step 1: In a large pan, saute onion and garlic in olive oil.

  • Step 2: Stir in oregano, thyme, cumin, and cayenne; cook 1 minute.

  • Step 3: Puree 1/2 of the black beans in a blender.

  • Step 4: Add puree, remaining beans, and broth to pan.

  • Step 5: Simmer for 15 minutes.

  • Step 6: Garnish with cilantr, parsley or crispy fried tortilla strips.
