Ingredients

The ingredients are:
  • 2 cups shredded carrots
  • 1/2 cup raisins (I use a mix of brown and golden, use either or both)
  • DRESSING
  • 1/4 cup Greek yogurt
  • 1/2 tablespoon mayonnaise (no Miracle Whip)
  • 2 tablespoons fresh orange juice
  • 1 teaspoon orange zest
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground cinnamon
  • Pinch of salt
  • Pinch of pepper

How to Make

  • Step 1: Orange ... I suggest buying a small orange, zesting first; then, cutting in half and juicing. One half of the orange should give you 1 teaspoon of zest; then the entire orange should give you 2 tablespoons or a bit more of the juice. You only need 2 tablespoons for this recipe.

  • Step 2: Dressing ... Add the yogurt, mayonnaise, orange juice, zest, ginger, cinnamon, salt, and pepper to a bowl and mix well.

  • Step 3: Salad ... Add the carrots and raisins to the dressing; and, mix to combine. Season with any additional salt and pepper if necessary. Cover and refrigerate at least 30 minutes before serving.

  • Step 4: Serve and ENJOY! This is such a nice simple salad. It is easy and refreshing - perfect summer salad.
