Ingredients

The ingredients are:
  • 1 head Boston or Bibb lettuce, leaves separated
  • 1 can (15 ounce) hearts of palm, drained, and diced
  • 1 mango, peeled and diced
  • 1/2 small red onion, very fine chopped (almost minced)
  • VINAIGRETTE
  • 1/4 cup fresh lime juice
  • 4 teaspoons dijon mustard
  • Pinch of sugar, only if the mango is not sweet
  • Salt
  • Pepper

How to Make

  • Step 1: Vinaigrette ... Add the lime juice and mustard to a small bowl and whisk well. The mustard will emulsify the lime juice, and create a creamy dressing. Season lightly with salt and pepper to taste; only add a pinch of sugar if the mango is NOT very sweet.

  • Step 2: Salad ... Add the hearts of palm, mango and red onion to a bowl, along with a little of the vinaigrette and toss.

  • Step 3: Finish and Serve ... Plate a lettuce leaf on each plate and top with a scoop of the salad. Drizzle with a little more vinaigrette, and fresh ground black pepper. ENJOY!
