  • 1 teaspoon flax seeds
  • 1/3 cup water
  • 1/2 cup vegan butter (Earth Balance) chilled
  • 1/2 cup creamy peanut butter (organic/salted)
  • 1 cup raw sugar crystals (Florida Crystals work well)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon pumpkin pie spice (optional)
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup white flour, organic/unbleached (Bob's Red Mill)
  • 1/2 teaspoon apple cider vinegar or lemon juice
  • Coarse sugar crystals (for rolling dough balls)

How to Make

  • Step 1: Preheat oven to 350 degrees.

  • Step 2: Whisk together 1/3 cup water and 1 teaspoon flax seed; set aside.

  • Step 3: In a large mixing bowl, beat together 1/2 cup vegan butter, 1/2 cup creamy peanut butter, 1 cup vegan sugar crystals, vanilla and pumpkin pie spice.

  • Step 4: Beat in the water/flax mixture, baking powder, baking soda, salt and flour.

  • Step 5: Lastly mix in apple cider vinegar or lemon juice.

  • Step 6: Roll dough into balls, then dip into sugar.

  • Step 7: Place on baking sheet.

  • Step 8: Bake for 12-14 minutes. Cool.
