  • 1/4 cup butter, melted
  • 1 large egg
  • 1 cup bananas, mashed
  • 3/4 teaspoon ground nutmeg
  • 1/2 cup brown sugar
  • 2 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 cup all-purpose flour (unsifted)
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon

How to Make

  • Step 1: Preheat the oven to 400 degrees F.

  • Step 2: Spray the muffin (or muffin top pan) with non-stick oil'

  • Step 3: In a small bowl combine the oatmeal and milk and soak.

  • Step 4: In a large bowl combine the dry ingredients.

  • Step 5: Mix the beaten egg, mashed banana and melted butter into the oatmeal mixture.

  • Step 6: Pour the banana mixture into the flour and stir just until combined.

  • Step 8: Remove from pan and allow to cool slightly on wire rack.
