Ingredients

The ingredients are:
  • 1 can (15 1/2 ounce) yellow hominy, drained
  • 1 can (15 ounce) black-eyed peas, rinsed and drained
  • 3 green onions, finely chopped
  • 3 cloves garlic, minced
  • 1 large tomato, chopped
  • 1 green bell pepper, diced
  • 1 jalapeno pepper, seeded and minced (I use more)
  • 1/3 cup chopped flat leaf parsley
  • 1/4 cup chopped onion
  • 1/2 cup prepared Italian salad dressing
  • Parsley sprig (for garnish) (optional)
  • Tortilla chips

How to Make

  • Step 1: Combine all ingredients and toss gently.

  • Step 2: Place in covered container and refrigerate several hours (gets better even overnight).

  • Step 3: Garnish with parsley sprigs before serving.

  • Step 4: Serve with warmed tortilla chips (heat in 350F oven 5-6 minutes).
