Ingredients

The ingredients are:
  • 1 tablespoon oil (olive oil)
  • 1 onion, small (chopped)
  • 1 red bell pepper, chopped
  • 3 garlic cloves, minced
  • 1 cup brown rice (long-grain uncooked)
  • 1 teaspoon salt, or to taste
  • 1 teaspoon cumin
  • 1/2 teaspoon cayenne pepper
  • 2 cups chicken broth (or vegetable)
  • 4 cups black beans, drained and rinsed
  • 1 tablespoon fresh Parsley, chopped

How to Make

  • Step 1: In a medium stockpot, heat the oil on medium heat.

  • Step 2: Add the onion, pepper, and garlic and sauté for 5 minutes.

  • Step 3: Add the broth and salt and bring to a boil; add the rice, cumin,and cayenne pepper; lower heat to medium low, and cover the pot with a lid.

  • Step 4: Cook until rice is done, about 40-45 minutes.

  • Step 5: Add in the beans and parsley the last 5 minutes just to heat through.
