Ingredients

The ingredients are:
  • English muffins (4 whole wheat English muffins, split in half and toasted)
  • Baby spinach
  • 4 red onion slices, thin sliced
  • BURGER
  • 1 pound ground lamb (or a mix of turkey or chicken; and beef)
  • 1 garlic clove, minced
  • 2 scallions, fine chopped (white and green parts)
  • 2 tablespoons sun dried tomatoes (in olive oil, fine chopped, include a little of the oil - 1/2 teaspoon)
  • 2 tablespoons black olives, fine chopped
  • 1 teaspoon Greek seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • Olive oil (extra to grill)
  • ARTICHOKE YOGURT SAUCE
  • 1 jar (6 ounce) marinated artichokes, drained and very fine chopped
  • 2 tablespoons greek yogurt (but you can substitute with mayonnaise)
  • 1 to 2 tablespoons feta cheese, crumbled
  • 1/2 teaspoon lemon zest
  • 1/2 lemon, juiced
  • Pinch of pepper

How to Make

  • Step 1: Yogurt Artichoke Sauce ... Add everything to a small bowl and mix well. Cover and refrigerate until ready to use. You may have a little leftover; but, use it as a dip with vegetables or topped on a warm crostini; as a dressing in a sandwich. Try topping a chicken breast and baking it too - it will NOT go to waste if there is any leftover.

  • Step 2: Burger ... Add the garlic, scallions, seasoning, sun dried tomatoes, olives, salt, pepper, and mix well. Then, add the lamb and mix to combine, trying not to over mix.
