  • 2 cups Cornflakes cereal (crushed
  • 1/3 cup grated Parmesan cheese
  • 1/8 teaspoon cayenne pepper
  • 1 teaspoon paprika
  • 1/4 to 1/2 teaspoon dried thyme
  • 1/2 teaspoon garlic powder
  • 1/2 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup reduced-fat milk
  • 3 medium zucchini (ends removed and cut into thin slices, about 3 1/2 pounds)

How to Make

  • Step 1: Preheat oven to 400?F.

  • Step 2: Line a baking sheet with parchment paper and spray with canola oil cooking spray.

  • Step 3: On a large plate combine the cornflake crumbs, cheese, paprika, thyme, garlic powder and cayenne.

  • Step 4: On another plate mix the flour, salt and pepper.

  • Step 5: In a medium bowl whisk the egg whites and milk together.

  • Step 6: Coat the zucchini slices in the flour mixture, followed by the egg mixture, then coat with the cornflake crumb mixture.

  • Step 7: Place the zucchini on the prepared baking sheet and lightly mist with canola oil cooking spray.

  • Step 8: Bake for 8 minutes, then flip them over and bake an additional 8 minutes.

  • Step 9: Serve hot.
