Ingredients

The ingredients are:
  • 1 1/2 pounds ground beef
  • 1 (1 1/4 ounce) package taco seasoning mix (or if your prefer,use your own homemade)
  • 1/4 to 1/3 cup finely chopped onion
  • 1/4 cup finely chopped green pepper, optional
  • 1/3 cup oil (to fry meatballs or to be healthier, bake the meatballs)
  • 1 jar (16 ounce) salsa (Chef's choice of heat level)
  • 3 cups cooked rice
  • 2 cups shredded cheese ( Mexican Blend cheese)

How to Make

  • Step 1: Mix together beef, taco seasoning, onion, green pepper, and bread crumbs.

  • Step 2: Lightly form into 1/2-inch balls.

  • Step 3: In medium-sized skillet over medium heat,lightly brown meatballs in oil that has been brought up to proper temp.

  • Step 4: Drain and return to skillet.

  • Step 5: Add salsa and simmer until salsa is warm and meatballs are heated through.

  • Step 6: Serve over rice and sprinkle with cheese if desired.
