Ingredients

The ingredients are:
  • 1/4 cup coconut oil (or 1/4 cup vegetable oil)
  • 1 garlic clove (finely chopped)
  • 2 sprigs chives (chopped)
  • 1 medium habanero chili (finely chopped)
  • 2 medium onions (chopped)
  • 1 teaspoon ground ginger
  • 2 tablespoons curry powder
  • 2 pounds tender lean beef (cubed)
  • 2 cups coconut water (or 2 cups tap water)
  • Salt (to taste)

How to Make

  • Step 1: Saute the garlic, chives, habanero, onion, ginger and curry powder in a large skillet until fragrant, 1-2 minutes, stirring constantly (to keep from scorching).

  • Step 2: Add the beef and cook until it is browned (can add a little more oil if you like), then add coconut water and salt.

  • Step 3: Lower heat, and cook, covered, for 1 1/2 hours, checking the amount of liquid to make sure it doesn't dissipate (add some water if needed).

  • Step 4: Serve with steamed jasmine rice if you like.
