Ingredients

The ingredients are:
  • 2 cups fresh or frozen berries - blueberries, 1 cup rhubarb and 1 cup strawberrie or your desired berry
  • 4 tablespoons fresh lemon juice
  • 1 3/4 cup sugar
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3 tablespoons butter, soft
  • 1/2 cup milk
  • 1 tablespoon cornstarch
  • 1 cup boiling water
  • Whipping cream or icecream

How to Make

  • Step 1: Grease 11x7 pan- High sided pan like a roaster. Sprinkle berries over bottom drizzle with lemon juice.

  • Step 2: In a large bowl combine 3/4 cup sugar, flour, baking powder, salt and butter. Add milk. Mix to just blend.

  • Step 3: Spread mixture over berries.

  • Step 4: Combine 1 cup sgar and cornstarch. Sprinkle over batter.

  • Step 5: Pour Boiling water over top.

  • Step 6: Bake 350 degrees 45-50 minutes or berry sauce bubbling around edges. Top golden.

  • Step 7: Serve warm with Whipping Cream or Ice cream.

  • Step 8: Mom's Pan was 10 1/2 x 7 3/4 x 2 1/4 inches deep.
