Step 1: Rinse soybeans in cool water and place in a bowl large enough to allow beans to double in size.
Step 2: Cover the beans with water; the water level should be a few inches above the beans.
Step 3: Allow the beans to soak at least 8 hours, but NOT more than 24 hours.
Step 4: Preheat the oven to 325 degress F.
Step 5: Drain the beans in a strainer for at least 10 minutes.
Step 6: Spread the soaked beans in one thin layer on a baking sheet.
Step 7: Roast 45 minutes to 1 hour, stirring every 10 or 15 minutes, until well browned and toasted.
Step 8: Remove from oven sprinkle with sea salt if you like, then let cool.
