  • 1 lb raw baby shrimp, peeled & deveined
  • 1 small jicama, 1/4-inch dice
  • 1 small red onion, 1/4-inch dice
  • 1/2 cup chopped fresh cranberries or 1/2 cup craisins
  • 1 cup ponzu sauce
  • 1 jalapeno peppers, minced
  • 1/4 cup unsweetened dried shredded coconut, toasted
  • Kosher salt
  • Fresh ground black pepper
  • Corn tortilla chips ( to garnish)
  • Unsweetened dried shredded coconut, toasted, for garnish
