  • 2 leeks, white and light green parts, cleaned and thinly sliced
  • 4 medium potatoes, diced
  • 1 cup chopped celery
  • 2 cloves garlic, chopped
  • 1 tablespoon butter
  • 1 teaspoon pepper
  • Salt, to taste

How to Make

  • Step 1: Melt the butter over medium heat in a Dutch oven or heavy bottomed pot.

  • Step 2: Add leeks, celery and garlic and cook until leeks start to wilt.

  • Step 4: Reduce heat and simmer until potatoes are cooked through, about 30 minutes.

  • Step 5: Mash well with a potato masher or blend with an immersion blender.
