Step 1: Melt the butter over medium heat in a Dutch oven or heavy bottomed pot.
Step 2: Add leeks, celery and garlic and cook until leeks start to wilt.
Step 3: Add the remaining ingredients and bring to a boil.
Step 4: Reduce heat and simmer until potatoes are cooked through, about 30 minutes.
Step 5: Mash well with a potato masher or blend with an immersion blender.
Step 6: Serve.
