Ingredients

The ingredients are:
  • 3 pounds red or yukon gold potatoes, peeled and sliced (about 1/4" thick)
  • 1/2 cup onions, cut in half and thin sliced
  • 1 cup baked ham, diced (a couple of slices from the Deli works great)
  • 1/2 cup gruyere or swiss cheese, shredded (you can always use your favorite)
  • 2 cups heavy cream (only use heavy cream)
  • 1 teaspoon dried thyme
  • Pinch nutmeg
  • Butter (to grease the crock pot)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon pepper
  • GARNISH
  • Fresh chives
  • Salt
  • Pepper

How to Make

  • Step 1: Crock Pot ... Butter the inside of your crock pot, sides and bottom.

  • Step 2: Potatoes ... Add a layer of the potatoes, 1/3 of them; followed by 1/2 of the ham, 1/2 of the onions, and 2 tablespoons of cheese. Then another layer of potatoes, rest of the ham, onions, and 2 tablespoons of cheese, and finish with the potatoes.

  • Step 3: Sauce ... Add the thyme, nutmeg, salt and pepper to the cream and mix well. Pour over the potatoes. And save that 1/4 cup remaining cheese - that will be added at the end of the cooking process.

  • Step 4: Cook ... Cover and cook on low 5-7 hours, older crock pots may take a bit longer. You can cook on high for approx 4 hours. Both seems to work well, but I prefer to use the lower heat. About 4 hours into cooking, I like to stir the potatoes if possible. If not, that is ok. But, as soon as you get home, if you have been out - give it a stir. Then cover and continue cooking.

  • Step 5: Serve ... About 10-15 minutes before serving, season with additional salt and pepper and the remaining 1/4 cup cheese. Cover just until melted, about 5 minutes. Garnish with chives and serve. ENJOY!
