Step 1: Heat olive oil (or melt bacon grease) in a large skillet.
Step 2: Add bacon and potatoes, cover, and let cook 10 minutes, stirring occasionally.
Step 3: Meanwhile, chop onion and celery; add to pan along with seasonings, cover and let cook an additional 5 minutes, stirring occasionally.
Step 4: Slice smoked sausage into 1/4 to 1/2 inch rounds; add to pan, cover and let cook 10 minutes.
Step 5: Dice red bell pepper and add to pan; cover and cook until everything is tender and sausage is hot, about another 5 minutes.
