Ingredients

The ingredients are:
  • 1 tablespoon olive oil (or bacon grease, which I recommend)
  • 2-3 slices bacon, chopped
  • 3 medium Russet potatoes, quartered and sliced thin
  • 1 medium onion, chopped
  • 1 stalk celery, sliced thin
  • 1/2 teaspoon garlic powder
  • 2 teaspoons Italian seasoning
  • 1/2 teaspoon black pepper
  • 1 pound smoked sausage
  • 1 red bell pepper

How to Make

  • Step 1: Heat olive oil (or melt bacon grease) in a large skillet.

  • Step 2: Add bacon and potatoes, cover, and let cook 10 minutes, stirring occasionally.

  • Step 3: Meanwhile, chop onion and celery; add to pan along with seasonings, cover and let cook an additional 5 minutes, stirring occasionally.

  • Step 4: Slice smoked sausage into 1/4 to 1/2 inch rounds; add to pan, cover and let cook 10 minutes.

  • Step 5: Dice red bell pepper and add to pan; cover and cook until everything is tender and sausage is hot, about another 5 minutes.
