Ingredients

The ingredients are:
  • 2 cups buttermilk
  • 1/2 cup oil (vegetable oil)
  • 2 large eggs
  • 1 teaspoon baking soda (DISSOLVED in 1/4 cup water)
  • 1 1/4 cups granulated sugar
  • 3 cups raisin bran cereal
  • 2 1/2 cups all-purpose flour (or half white and whole wheat flour)
  • 1 teaspoon salt
  • 1/2 teaspoon ground cinnamon

How to Make

  • Step 1: Grease 24 muffin tins.

  • Step 2: Preheat oven to 375 degrees.

  • Step 3: In a bowl combine first 4 ingredients; mix in raisin bran and allow to sit for 10 minutes.

  • Step 4: After 10 minutes, Mix in baking soda/water mixture

  • Step 5: In another bowl mix flour, salt and cinnamon; mix into wet mixture just until combined.

  • Step 6: Spoon into muffin tins.

  • Step 7: Bake for about 20 minutes
