  • 1 cup sugar
  • 1 teaspoon lemon extract
  • 3 eggs
  • 2 cups flour
  • 1 1/2 teaspoons baking powder

  • 3/4 cup milk
  • LEMON GLAZE
  • 3/4 cup confectioner sugar
  • 1/2 cup fresh lemon juice
  • 2 teaspoons grated lemon rind

How to Make

  • Step 1: Preheat oven to 350°F.

  • Step 2: Combine the oil and sugar and lemon extract and mix well. Add the eggs and continue beating the mixture until it is smooth.

  • Step 3: Mix the flour, baking powder and salt and lemon zest into the egg mixture. Add the remaining ingredients and mix together well.

  • Step 4: Pour the batter into a well greased 12 cup bundt pan.

  • Step 5: Bake for 1 hour.

  • Step 7: While cake is still hot, pierce several times with a cake tester or toothpick to create small holes in the cake, then spoon the glaze over the cake.
