  • 2 medium yellow onions, chopped
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons garlic, chopped
  • 1 1/2 teaspoons cumin seeds
  • 1 bay leaf
  • Cinnamon stick (1/2-inch)
  • 2 medium tomatoes (chopped)
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • Salt
  • 1/4 to 1/2 teaspoon cayenne pepper
  • 2 cans (15 ounces each) garbanzo beans (rinsed and drained)
  • 1/2 to 1 teaspoon garam masala
  • 1 tablespoon fresh lemon juice

How to Make

  • Step 1: In large saucepan over medium heat, heat cumin seeds, bay leaf and cinnamon until very fragrant; add ginger and garlic, then add onions.

  • Step 2: Saute onions until they are translucent. Add oil or water if you need to.

  • Step 3: Add the tomatoes, coriander, turmeric, salt, and cayenne.

  • Step 4: Check for seasoning, adding more as you prefer.

  • Step 5: Bring to a boil; add garbanzo beans (chickpeas), cover, and reduce heat.

  • Step 6: Simmer on low for 10-15 minutes.

  • Step 7: Stir in garam masala and lemon juice just before serving.

  • Step 8: Garnish with chopped cilantro.
