Ingredients

The ingredients are:
  • 1 tablespoon oil (olive oil)
  • 2 medium onions, diced
  • 2 celery stalks, chopped
  • 2 medium carrots, diced
  • 6 garlic cloves, coarsely chopped
  • 1 jalapeno pepper, diced finely (seeded if you like)
  • 1 bell pepper, diced (seeded)
  • 2 tablespoons chili powder (or to your taste, I would start with 2 tablespoons)
  • 2 teaspoons ground cumin
  • 1 (28 ounce) can crushed tomatoes
  • 3 (15 ounce each) cans red kidney beans, drained and rinsed
  • 1 medium butternut squash (peeled and diced, about 3 cups/12 ounces)
  • 1 1/2 cups vegetable stock
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

How to Make

  • Step 1: Heat the oil in a large saute pan, then add the onions, carrots and celery. Saute for four minutes, until the vegetables start to soften. Add the garlic, jalapeno pepper and bell pepper, stir and saute another 2 minutes.

  • Step 2: Add chili powder and cumin, stir for 2 minutes to release the flavors.

  • Step 3: Transfer to a slowcooker. Mix in all remaining ingredients. Cover and cook on LOW for 6 hours.
