Ingredients

The ingredients are:
  • 1 cup all-purpose flour
  • 1 cup yellow cornmeal
  • 2 to 4 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 eggs, beaten (or egg replacer to equal 2 eggs)
  • 1 cup low-fat milk (or soy milk)
  • 2 tablespoons olive oil
  • 2 tablespoons applesauce

How to Make

  • Step 1: Preheat oven to 425. In a mixing bowl stir together flour, yellow cornmeal, sugar, baking powder, and salt. Combine eggs, milk,cooking oil and applesauce; add to flour mixture all at once. Beat just till smooth (do not over beat).

  • Step 2: Spray a small baking dish with cooking spray and spoon in mixture. Bake for 20 to 25 minutes or till done.
