Ingredients

The ingredients are:
  • 1/2 cup dry breadcrumbs, seasoned (you might need more)
  • 1 medium eggplant, peeled and sliced into 16 or 18 pieces
  • 1/4 cup egg white
  • 2 teaspoons cold water
  • Fat free marinara sauce, for dipping

How to Make

  • Step 1: Brush a large baking sheet with about 1 tablespoon of oil, just make sure there's enough oil on your baking sheet so the breaded slices won't stick.

  • Step 2: In a shallow bowl whisk the egg white with water.

  • Step 3: First dip the eggplant slice in the egg whites, then coat in the breadcrumbs on both sides.

  • Step 4: Bake in a preheated at 400 degrees F turning once, about 22-25 minutes, if you like them crispy bake a little longer just watch they don't burn. Serve with marinara sauce for dipping.
